Vegetable Stews Recipes

 
Brown Stew
A delicately flavoured stew for those do not like their dishes too spicy. Serve only with bread slices.
 
Ingredients :
175 grams french beans
175 grams carrots
175 grams green peas
175 grams cauliflower
175 grams potatoes
175 grams small onions
3 large onins
2 tomatoes
1 tablespoon plain flour (maida)
3 cloves 2 sticks cinnamon
3 peppercorns
3 teaspoons Worcestershire sauce
4 tablespoons ghee
salt to taste

Preparation :
Slice the large onions. Cut the other vegetables ( except green peas) into big pieces. Heat the ghee in a big vessel and fry the sliced onions until they are brown in colour. Add the cinnamon, cloves and peppercorns and fry for 1 minute. Add the vegetables except tomatoes and fry until they become brown. Add 2 to 3 teacups of water and cook until the vegetables are done. Mix the flour in 1/2 teacup of water and add to the stew. After 2 minutes, add the tomatoes, sauce and salt and cook for 2 minutes. Serve hot.

Vegetable Stew  
Ingredients :
1 coconut
2 cups mixed boiled vegetables
1 onion, chopped
2 cardamoms
2 cloves
2 small sticks cinnamon
2 green chillies, chopped
1 teaspoon cornflour
1 tablespoon oil
salt to taste

Preparation :
You can take carrots, potatoes, french beans, cauliflower as mixed vegetables. Grate the coconut, add 2 cups of water and take out coconut milk. Strain, add the cornflour and mix well. (You can also use 2 cups of ready coconut milk instead). Heat the oil in a tava and fry the onion for 1 minute. Add the cardamoms, cloves and cinnamon and fry again for a few seconds. Add the green chillies and salt and fry again for a while. Add the coconut milk and vegetables and cook for a few minutes. Remove from the fire. Serve hot.
