| In a glass bowl, combine the oil, mustard seeds, curry leaves, ginger and green chilli and microwave on HIGH for 1 minute. Add the turai, turmeric powder and salt and mix well. Cover with a lid and microwave on HIGH for 6 minutes. Add the coconut, sugar and lemon juice, cover with a lid and microwave on HIGH for 2 minutes. Serve hot, garnished with the chopped coriander. |

2 cups mixed boiled vegetables (carrots, potatoes, french beans, cauliflower) 1 onion, chopped 2 cardamoms 2 cloves 2 small sticks cinnamon 2 green chillies, slit 1 coconut 1 teaspoon cornflour 1 tablespoon oil salt to taste |

Grate the coconut, add 2 cups of water and take out coconut milk. Strain, add the cornflour and mix well. Heat the oil in a tava and fry the onion for 1 minute. Add the cardamoms, cloves and cinnamon and fry again for a few seconds. Add the green chillies and salt and fry again for a while. Add the coconut milk and vegetables and cook for a few minutes. Remove from the fire. Serve hot.
