Broccoli and Carrot Bake 
Ingredients :
1 very small flower(100g) broccoli(broken into small florets),1 carrot(cut into small cubes),2 tbsp flour(maida),2 tbsp butter,2 1/2 cups milk,25g cheese(grated),3/4 tsp salt,1/2 - 1/4 tsp pepper or to taste.

Preparation :
Cut the stalks into thin round slices and the florets into small pieces.Melt butter in a heavy bottomed pan or kadai.Add flour and stir for 1 minute on low flame.Add milk stirring continuously.Boil.Add broccoli and the carrots.Cook stirring continuously for 5-7 min,till the vegetables turn soft and sauce turns thick.Add cheese,salt and freshly ground pepper to taste.Remove from fire.Transfer to a greased serving dish.Bake for 20minutes at 230 degree C till golden.

Saffron And Spinach Casserole 
Ingredients :
1 cup macaroni,1 tbsp oil,1 big onion,15 cloves garlic,8-10 French beans,1 medium Zucchini,1/2 medium broccoli,1/2 bunch spinach,2 medium carrots,3 tbsp butter,1 tbsp refined flour(maida),1 1/2 milk,a pinch nutmeg(grated),1 cup grated cheese,salt to taste,1/4 tsp pepper powder,1/4 tsp freshly crushed peppercorns,a generous pinch saffron.

Preparation :
1.Heat water,bring it to a boil,add 1 tbsp of oil and the pasta.Boil till it is nearly done but not fully.Peel,wash and chop onions.Peel and finely chop garlic.

2.Boil water and blanch French beans,zucchini,broccoli,spinach and carrots one by one.Cut beans, zucchini and carrots in diamond shape.Puree the blanched spinach and break broccoli into small florets.Heat 1 tbsp of butter and lightly saute refined flour.Gradually add 1 cup milk and stir continuously so that no lumps remain.Add nutmeg,some cheese,salt and pepper powder.This is the mornay sauce.

3.Heat 1 tbsp butter in a pan,add chopped garlic,saute till golden brown.Add chopped onion and saute again till golden brown.Add beans,broccoli,zucchini and salt and saute well.Add half of the mornay sauce,1/2 cup of milk and mix well.

4.Add spinach puree and half of the freshly crushed pepper and mix well.Dissolve saffron in remaining 1/2 cup of milk.In another pan,heat the remaining butter and saute carrots.Add boiled pasta,remaining mornay sauce,saffron milk and mix well.Add salt.Cook for sometime and add the remaining freshly crushed pepper.

5.In an oven proof dish,pour the green vegetable mixture.Spread half of the grated cheese on the green vegetable mixture and then pour the carrot-pasta mixture over it.Again spread a layer of remaining grated cheese and bake for 5-10minutes in a preheated oven at 250 degree F till the cheese melts and turns golden.
