| Ingredients : |
Serves:2-3 1 small broccoli(250g-broken into medium florets with long stalks),2 tbsp oil,8-10 flakes garlic(crushed),1 green chilli(deseeded and chopped),1 1/2 tbsp soya sauce,1 1/2 tsp tomato ketchup,1/3 tsp freshly ground pepper,2 tbsp chopped coriander. |

| Preparation : |
| Boil 2 cups water with 1 tsp salt and 1/2 tsp sugar.Add broccoli.Boil for 2-3 minutes till it turns a little soft.Do not overcook.Strain.Keep aside.Heat oil.Reduce flame.Add garlic and green chillies.Fry till garlic changes colour.Remove from fire.Add soya sauce and tomato sauce.Return to heat.Cook sauces for a few seconds on very low flame.Add coriander.Add broccoli and pepper.Stir fry for 5 minutes.Sprinkle some more soya sauce if desired.Serve. |

| 100g lotus root,250g flour,4 tbsp oil,3-4 tbsp icing sugar,oil for frying the dumpling,1 tsp bicarbonate of soda,salt to taste. |

| Preparation : |
| Boil the lotus root till tender.Drain and cut into tiny pieces.Sprinkle salt and keep aside.Knead the flour with the oil,salt bicarbonate of soda and water and knead into dough,which is neither very soft nor hard.Divide the dough into portions and roll out each portion into rounds and flatten with a rolling pin.Place a bit of the lotus root in the centre of each round and cover the dumpling.Stuff all the dumplings in this way.Heat oil and fry the dumplings, a few at a time till they are a golden brown in colour.Sprinkle icing sugar on each dumpling while they are still hot.
