| Ingredients : |
| 1 large pineapple or two small ones,1 large brick of vanilla or chocolate chip ice-cream,2 tbsp castor sugar or to taste,sprigs of mint for garnish. |

| Preparation : |
| Cut across the top of the pineapple to form a cap and cut across the bottom,if needed,to make the pineapple stand up straight.With a sharp knife or peeler remove the flesh from inside the pineapple.Cut away the eyes and chop the flesh into tiny bits.Place in a bowl,sprinkle with castor sugar,mix well and chill in the fridge.Place the pineapple shell along with the top(separately) in the freezer for 1/2 hour or more or until very well chilled.Beat the ice-cream in a bowl,remove the shell from the freezer and the chopped pineapple from the fridge.Place a small amount of ice-cream at the bottom of the shell,sprinkle with some chopped pineapple and then some more icecream until all of it is used up.Place this in the freezer for 2-3 hours or until well frozen.To serve,place pineapple shells on a serving platter surrounded by mint sprigs, place the frozen top on it and serve immediately. |
